Black Bean Salsa
Black Bean Salsa
Serves 6, 3/4 cup
Ingredients:
- 1 15.5 ounce can black beans, drained
- 1 cup frozen corn kernels, thawed
- ½ red bell pepper, washed, seeded and diced
- 1 medium tomato, washed and diced
- ½ cup red onion, peeled and diced
- 1 garlic clove, minced
- 2 teaspoons fresh cilantro, washed and finely chopped
- 2 Tablespoons cider vinegar
- 3 Tablespoons olive oil or vegetable oil
- Juice of one lime
Directions:
- Wash hands with warm soapy water and dry well.
- In a large bowl, combine all the ingredients. Stir well and chill for 1 hour before serving. Enjoy.
Options:
- Try adding a jalapeno or hot chili for more spice
- Add shredded or finely chopped summer squash and carrots
- Cooked fresh corn on the cob, removed from cob can be added
- Canned corn can also be used
- No salt diced tomatoes can be used in place of fresh tomato
- Serve with baked tortilla chips, top on a salad or baked potato!
